- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2–3 jalapenos, diced
- 1/4 cup fresh cilantro, chopped
- Meat (shredded chicken or beef)
- Spices (cumin, chili powder, paprika)
- Cheese (Monterey Jack or Queso Fresco)
- Corn tortillas
- Fresh lime juice
Instructions
- Prepare the filling by cooking meat until tender.
- Sauté onions and garlic until soft; combine with meat.
- Add spices and mix well.
- Warm tortillas to make them pliable.
- Fill each tortilla with the mixture and roll them up.
- Place rolled enchiladas seam-side down in a baking dish.
- Cover with sauce and cheese.
- Bake at 375-400°F (190-200°C) for 20-25 minutes until cheese is melted and bubbly.
- Garnish with sour cream and avocado before serving.
Notes
For a milder sauce, reduce the number of jalapenos. Use fresh, high-quality ingredients for the best taste.
